Beef & Black Bean
A melt in the mouth beef dish in a rich, thick Mexican sauce. Served on a bed of rice and topped with sour cream and guacamole, with a side of corn chips. Need we say more.
Mexican Beef and Black Bean Shopping List
- 800g Beef diced. (We use Oyster Blade)
- 1 tblspn Olive Oil
- 1 Spanish Onion (finely sliced)
- 1 425g Can Black Beans (drained & rinsed) *
- 2 Cans Diced Tomatoes
- 1/2 Cup Beef Stock
- 1/4 Cup Tomato Paste
- 2 tblspns Brown Sugar
* Black Beans can be found in the Mexican section of your supermarket.
